Salt Hank's founder Henry Laporte joins Drew Barrymore and Sunny Anderson in the kitchen to show how to make a delicious birria sandwich. Plus, he shares what it was like working with Benny Blanco!
Salt Hank’s Birria Dip from his cookbook Salt Hank: A Five Napkin Situation
Recipe ingredients:
- 1 medium (2-pound) chuck roast
- 2 ½ cups vegetable oil, divided
- ½ tablespoon kosher salt, plus more for seasoning
- ½ tablespoon freshly ground black pepper, plus more for seasoning
- 2 white onions, one thinly sliced, one finely diced, divided
- 12 garlic cloves
- 10 dried ancho chilis
- 3 dried guajillo chilis
- 4 tablespoons dried oregano
- 12 cups beef stock
- 1 tablespoon beef bouillon base
- ½ cup all purpose flour
- ½ tablespoon cayenne
- ½ tablespoon paprika
- ½ tablespoon garlic powder
- ½ tablespoon onion powder
- 6 green onions, thinly sliced lengthwise
- 1 ½ cups whole milk
- 1 rustic baguette
- 2 cups shredded mozzarella cheese
- 2 tablespoons extra-virgin olive oil
- 1 cup packed fresh cilantro leaves
- Benny’s Avocado Salsa
Prep time 30 mins
Cook time 2 hours
Temp 325F
STEP 1: Make the roast
- Have chuck roast already cubes and seared
- Add onions, garlic, chilis, and oregano, beef stock and bouillon to pan. Add chunks to pot. Cook until tender.
STEP 2: Assemble
- Have consommé already blended for dipping
- Add chuck roast to baguette, top with cheese. Add to frying pan. Garnish
